What gives with Fargo this week?

  • Look at these stories:  Here’s the alleged stuff:  A popular Fargo dentist is slain by the hired hand of the father-in-law of Dr. Phillip Gatusso.  The father of the now deceased daughter that was married to the doctor hired a redneck yahoo to come to Fargo, kill, steal and bring it home.  All because they didn’t like the loving, kind manner in which Dr. Gatusso was raising 3-year old little Kennedy.   I wonder if they were planning to kidnap the child.  This would be laughable if it weren’t so tragic.  Who’s going to raise that poor  little girl that still cries for her daddy?  Click here for article
  • Then, there’s this one:  A 64 year old Fargo woman is assaulted and rape is attempted by a “young, white male”  wearing a hoodie…In her garage, in broad daylight!  An alert, caring passerby shooed the creep away and the woman is uninjured…except, maybe in her confidence of a safe neighborhood, which is the 900 block of Page Drive.   Click here for article
  • But, wait!  There’s more!  A drunken male, left babysitting a 2-month old baby, fell asleep, rolled over onto the child, and smothered her to death!  The parents, who’d been out boozing until 2am, returned home and attempted CPR.  (Yeah.  Right.)  Click here for article
  • And, finally:  A 43-year old father of three, and former starched shirt for BCBS, has pleaded guilty to having more than 640,000 pictures of child pornography and 2000 videos on his computer hard drive.   Robert Scheiring could go to prison for ONLY 30-years.  What a slime.  It’s been suggested that maybe he should share a cell with Alfonso Rodriguez for the duration…or until A-Rod is gone.  And, again, who’s going to raise those girls?  Click here for article

CBS News reported today that among those at the Vikings defeat of the Green Bay Packers, many cheered Brett as he left the field.   One guy said, “I booed him when he came in and cheered him when he left.”  That’s very cool.  I mean, it is just a game, right?  I didn’t have any money on it, so, “it’s just a game.”

Another thing.  I managed to watch some of the NDSU vs WIU football game Saturday.  NDSU Won!  Glad about that.  However, did you see that the members of the WIU Marching Band outnumbered fans in the stands?

My favorite costumes in downtown Fargo Saturday belonged to a group calling themselves, “the march of the clowns.”   Great fun!

Finally, did you see that all the Cass County H1N1 vaccines were given out Saturday?  2,150 children immunized!  Across the river, earlier in the week only half of the 1,500 vaccines were given.  Do parents on the North Dakota side care more about their kids than those “over there?”  Was Collin Peterson right when he inferred that 75% of his constituents were “over the edge?”  If they believe our government bombed the World Trade Center, maybe they also believe the vaccine is a commie plot to bring us to our knees.  Or, perhaps they believe it’s an alien plot from Mars…Maybe we’ll ask the Congressman…

There is a huge rock near a gravel pit on Hwy 25 in rural Iowa.  For generations, kids have painted slogans, names, and obscenities on this rock, changing its character many times. A few months back, the rock received its latest paint job, and since then it has been left completely undisturbed.

It’s quite an impressive sight. Be sure to scroll down and check out the multiple photos. (all angles) of the rock.

I thought the flag was draped over the rock, but it’s not. It’s actually painted on the rock too.

Root Vegetable Mash
This is a delicious and nutritious side dish, plus a great way to get the kids to eat their vegetables. Grill a pork tenderloin, chicken breast or your favorite steak and you will have a delicious dinner the entire family will like. Any assortment of root vegetables will work.

Here’s a good combination for you to start with. If there is an ingredient on the list you don’t like, leave it out and add more of what you like. The combinations are endless.

Ingredients:
4 small carrots or 2 large, peeled and cut into 1 1/2” chunks
2 parsnips, peeled and cut into 1 1/2” chunks
1 small rutabaga, peeled and cut into 1 1/2” chunks
2 cloves garlic, peeled, left whole
3 large Yukon Gold potatoes, peeled and diced
1/2 cup milk
4 T. butter
1 tsp. salt
1/2 tsp. pepper
1 T. chopped fresh chives

Place carrots, parsnips, rutabaga and garlic in a stockpot and cover with cold salted water. Bring to a boil and reduce heat. Simmer for about 30 minutes, add the potatoes and cook until all vegetables are tender. Approximately 20 additional minutes. Combine the milk, butter, salt and pepper. Microwave until the butter is melted and the milk is warm. Stir well.

Drain the hot vegetables. With the chop blade in place, put the vegetables in the bowl of the food processor, close the lid and add 1/2 of the milk mixture. Pulse to desired consistency. Add additional milk if desired. You may not need it all. Place in a serving bowl and stir in the chives.

Yield: 6 to 8 servings


Healthy Twice Baked Potatoes

Ingredients:
1 C. cauliflower puree*
1/2 C.water
8 small or 6 medium red potatoes
1/2 C. low-fat sour cream
2 T. butter, melted
1 tsp. salt, divided
1 tsp. pepper, divided
2 tsp. dried onion flakes
1/2 C. warm milk (may not need it all)
1 T. chives
3 slices bacon, fried and crumbled

Preheat oven to 350 degrees
*Cauliflower puree: Cut florets from one head of cauliflower and discard core. Steam or boil for about 12 – 15 minutes, or until tender. Drain and place in the bowl of a food processor, add 1/2 tsp. salt and 1/2 tsp. pepper. With the chop blade in place, turn the machine on and puree. Add water as needed. Place in separate bowl and set aside. This will make approximately 3 cups, use the extra in other recipes or freeze for later.

Scrub the potatoes and prick them with a fork. Bake until tender, about 1 to 1 1/2 hours depending on the size of the potatoes. When the potatoes are cool enough to handle, but not cold, cut the top fourth off and scoop out the pulp, leaving a thin shell. With the chop blade in place, put the potato pulp, cauliflower puree, sour cream, melted butter, salt, pepper and onion flakes in the bowl of your food processor. Add a little milk and turn the machine on until it reaches a thick consistency. The thicker the better. Add the warm milk as needed. Remove the cover and add the chives and reserved bacon, pulse 2 or 3 times to mix.

Spoon the mixture back into the potato shells. If you are serving right away, put the potatoes on a sheet pan and place under the broiler to brown a bit, about 3-5 minutes. If you are serving later, store in the refrigerator, uncovered. Just before serving, place the potatoes on a baking sheet and bake for about 20 minutes at 350 degrees or until hot, plus an additional 3-5 minutes under the broiler.

Yield: 6 to 8 servings

BIG IRON FARM SHOW ANNOUNCES FREE TRACTOR PULLS

The 29th annual Big Iron Farm Show, North Dakota’s premier agricultural event will offer Free Modified and Antique Tractor Pulls in the grandstand.  Both shows are sponsored by the Wingate by Wyndham, Fargo.

The Central Minnesota Pullers Association will bring a variety of modified tractors for the Modified Tractor Pull on Tuesday, Sept  15th.  Ranging from the single engine 5800 lb. tractors to multiple blown V-8’s and twin 1700+ cubic inch Allisons in the 7500, the tremble of the earth and high RPM scream are a modified tractor fan’s delight.  

Wednesday, Sept 16th will host the Antique Tractor Pull.  With an expected full house, fans will be entertained by the power of the antique tractor.  Both shows are free to the first 8,400 people.
